Semolina Fruit Cake


This cake is soft textured and really yummy, however, need to refrigerate after 10 hours.






250gm butter
170gm castor sugar
2 tbsp honey
4 large eggs
100ml fresh milk
170gm flour
100gm semolina/fine suji
1 tsp baking powder

2 tbsp sun quick orange
50gms of fruit mix
(soak fruit mix with sunquick orange for 4 hrs or overnight)

use a 8 x 8 pan, coated with butter

Sieve flour with baking powder. Then mix it with semolina. Keep aside.
Beat egg with milk and keep aside.
Beat butter, sugar, and honey until light and fluffy. Add the egg mixture in three parts and beat each time until it becomes fluffy. Then slowly add in flour to the batter and beat each time. Finally, stir in the fruit mix until well incorporated. Bake in pre heated oven 175C for 45 to 50mins or check with a skewer, if it comes out clean, then the cake is done. Leave to cool thoroughly before cutting and serving. Refrigerate after 10 hours or so.
